										<content:encoded><![CDATA[<p><strong>Organic plain bread flour mix &#8211; 500g</strong> made from <strong>rice</strong>, <strong>buckwheat</strong> and <strong>psyllium</strong> <strong>flours</strong>. Ready-to-use mix for <strong>homemade gluten-free bread.</strong><br />
<strong>Rice and buckwheat flours</strong> are not suitable for bread-making. However, <strong>psyllium</strong> is an excellent substitute for gluten. It <span style="text-decoration: underline;">adds softness and puffiness to the preparation</span>.<br />
Ecocert-certified product. Gluten-free. Can therefore be consumed by people with gluten intolerance.</p>
<p><strong>Gluten-free bread recipe:</strong><br />
&#8211; 400g organic bread flour mix<br />
&#8211; 1 sachet baker&#8217;s yeast<br />
&#8211; 5g salt<br />
&#8211; 34ml warm water<br />
Dilute the yeast in a little lukewarm water and let it activate for a few minutes. Add remaining water. In a bowl, combine the Mamie Malice organic bread flour mix, salt and yeast and mix thoroughly. Cover with a cloth and leave to rise for several hours. Preheat oven to 240°C. Place the bread dough in the oven and reduce the temperature to 220°C. Bake for 25 min.</p>

										<content:encoded><![CDATA[<p><strong>Organic green coffee powder </strong> is the ripe fruit of the coffee tree, a shrub that grows in the highlands of tropical zones. These are mature beans that have not been roasted. As it is not roasted, our ground green coffee retains all the natural virtues of the coffee plant. Richer in caffeine than roasted coffee, green coffee is appreciated for its energizing effect. In addition to the stimulant caffeine, green coffee contains chlorogenic acids, which disappear during roasting. These organic compounds are excellent antioxidants.<br />
They therefore help protect the body against free radicals, and delay cell ageing. In 2006, a Japanese team published a study in the journal Annals of Internal Medicine suggesting that<strong> green coffee</strong> also had benefits for overweight people. The chlorogenic acids it contains are thought to reduce the absorption of sugars by liver cells, and thus the transformation of sugar into fat by the liver.</p>
<p>The caffeine content of Coffea robusta (organic green coffee powder &#8211; 250g) is between 1.5 and 2.6 g/100 g (average 2.2 g/100 g) dry matter. It&#8217;s not a measured value.</p>

										<content:encoded><![CDATA[<p>Organic coconut blossom sugar is made from the sap of coconut blossoms (cocos nucifera) in Indonesia, using a traditional process. Harvesting the sap of the blooms is a very old tradition and our producers are using their &#8220;know-how&#8221; to ensure the highest quality organic sugar.</p>
<p>The collected liquid sap is gently heated to evaporate the water until a thick amber syrup is obtained. The hardened syrup is then reduced to crystal sugar.</p>
<p>The production of coconut sugar is sustrainable because nothing is destroyed during the process : coconut trees remain in place and continue to produce buds, which will be used to make sugar or coconut again and again.</p>
<p>Coconut blossom sugar contains 16 amino acids including glutamine and threonine. It also contains vitamins ( group B except B12) and minerals. It contains 26 times more phosphorus, 15 times more potassium and 4 times more magnesium than brown sugar.</p>

<p>Soft wheat is especially recommended for germination. Germination increases the content of vitamins, enzymes and trace elements of the seed. Wash the seeds thoroughly before soaking. Wheat will take about 2 to 3 days to germinate; we recommend spraying with filtered water if possible to keep the soil moist.</p>
<p>Sprouted wheat should be consumed raw, in sprouts of about 0.5 cm or in shoots of 1 cm. Do not forget to wash the sprouts before consumption. Sprouted wheat seeds are ideal for salads, soups and woks or to decorate your desserts.</p>
<p>If you do not consume them immediately, keep them for a few days in a refrigerator with a lid.</p>
<p>For a wheatgrass juice, it is necessary to wait until the shoots grow and harvest the strands about 15 cm to extract the juice. Wheatgrass juice should be consumed immediately after extraction.</p>

<p>Alfalfa, is a perennial herbe that can grow from 30 to 80cm tall. Alfalfa has a complete nutritional profile and contains vitamins, minerals and amino acids. Researchers measured its total antioxidant activity using an index called FRAP: according to this study, the FRAP index of untreated alfalfa seed would be 34.5 μmol / g4. This level of antioxidant activity is relatively high: for comparison, researchers measured the FRAP index of other foods and the highest of the vegetables studied was spinach, with an index of 26.9 (1).</p>
<p>Germinated seeds of alfalfa are eaten in green shoots of 2 to 3 cm; the base of the shoots must be white, and the end green. They are ideal with salads or radishes, replacing lettuce in your burgers, tacos and sandwiches, in an omelette or soup (at the end of cooking). They also mix with shrimp and cheese sauce.</p>
<p>Caution: consumption of alfalfa is contraindicated for people who have had systemic lupus erythematosus; it contains L-canavanine, an amino acid that could contribute to worsening the symptoms of the disease.</p>

<p>Green lentil seeds are an important source of protein, iron and calcium. They contain vitamins A, B1, B2, B3, B6 and C. They are both very consistent and digestible. Their consumption is particularly recommended for nursing mothers.</p>
<p>These seeds require soaking in at least three times their volume of water. Green lentils can be consumed as soon as the germ appears and up to 2 or 3 cm, even in the young shoot stage (10 cm), raw or cooked (5 minutes with gentle steam). The sprouted lentil is pureed, fresh and crisp salad with vinaigrette, or minestrone.</p>

<p>The sprouted sunflower seed has the texture of a dry fruit (almond), it offers a very sweet and pleasant taste.</p>
<p>Sunflower sprouts are called &#8220;oleaginous&#8221; (up to 56% fat) and contain 85% unsaturated fatty acids, vitamins B, D, E, minerals and trace elements. They contain 18% of proteins, 13% of carbohydrates of which a significant part of fibers. High in nutritional value, sprouted sunflower seeds are a good source of vitamins B, D, E, minerals and trace elements (magnesium, copper, phosphorus, potassium, zinc, iron, calcium).</p>

<p>Like quinoa and amaranth, buckwheat is generally referred as pseudo-cereal, but unlike conventional cereals, it does not belong to the family of grasses. The sprouted buckwheat seed contains essential carbohydrates and amino acids, vitamins A, B1, B2, B3, B5, C, E, K, rutin (vitamin P), and mineral salts (silicon, magnesium, phosphorus, calcium potassium, manganese, zinc, copper, fluorine, iron).</p>

<p>Originally from Mexico, the chia belongs to the Lamiaceae family, more precisely to Salvia (like sage). Very dense from a nutritional point of view, chia seeds used to be for the Aztecs a precious staple food.</p>
<p>After being ignored for centuries, chia seeds are back thanks to nutritionists who advocate their consumption. They are now part of the very popular club of  &#8220;super foods&#8221;.</p>
<p>The advantages of chia seeds:</p>
<p>• gluten free,</p>
<p>• naturally rich in &#8220;good fats&#8221;: omega-3 and omega-6,</p>
<p>• nearly 22% protein, including all essential amino acids (AAE);</p>
<p>• antioxidants, vitamins and minerals;</p>
<p>• dietary fiber.</p>
<p>&nbsp;</p>
<p><strong>Ingredients</strong>: 100% organic chia seeds</p>
<p><strong>Packaging</strong>: 500 g</p>
<p><strong>Origin</strong>: Bolivia</p>
<p><strong>Recommended use</strong>: take 2 to 3 teaspoons (5 g each) per day of chia seeds.</p>
<p>Whole or powdered organic chia seeds can be eaten directly on salads, soups, yogurts, mueslis and compotes. Dry, the seeds crack a bit in the tooth, like poppy seeds.<br />
Another way to consume them is to soak them  in a liquid (water, juice, vegetable milk). The chia seeds then form a mucilaginous gel. This chia gel has a great satiating power. It is also an excellent substitute for eggs in vegan cooked dishes (1 egg = 1 tablespoon finely ground chia seeds, poured into 3 to 4 tablespoons of water.) Stir briefly, wait 5 minutes then stir again, let stand about 20 minutes.</p>

										<content:encoded><![CDATA[<p>Natural sugar extracted from birch bark, xylitol is widely used in the Nordic countries for twenty years.</p>
<p>Xylitol has the same sweetness and flavor as traditional sugar (sucrose). On the other hand, its caloric intake (2.4 kcal / g) is 40% lower than that of sucrose (4 kcal / g): an real advantage in the context of a healthy diet.</p>
<p>Xylitol &#8211; birch sugar can be used for diabetes, thanks to its low glycemic index (7).</p>
<p>The advantages of xylitol:</p>
<p>same taste and appearance as sugar;<br />
2 times less caloric than sugar;<br />
very low glycemic index (7);<br />
can be used in culinary preparations (hot or cold dishes). When cooked, the sweet taste of Xylitol increases: reduce the dose of sugar in your recipe from 30% to 50%.</p>

<p>The xylitol we sell is 100% natural and comes from the extraction of birch bark from Finland (Europe) where quality controls are followed. No xylitol can obtain the organic certification (some extraction steps do not allow the xylitol to be certified organic even if the birches used at the beginning are organic).</p>
<p><strong>Packaging</strong>: 500 g</p>
<p><strong>Precautions for use</strong>: excessive consumption (more than 70 g per day in adults, 35 g per day in children) can cause transit and minor adverse effects: bowel disorders.</p>
<p>DO NOT USE FOR ANIMAL FEEDING: harmless for humans, xylitol is dangerous for the animal, especially the dog. If consumed (even in small quantities), it may cause severe hypoglycaemia, liver damage and in some cases neurological signs.</p>
