There are over 120 species of Opuntia, the most famous being the Mexican nopal, the Madagascan racket and the Mediterranean prickly pear, for which Morocco is the land of choice.
This prickly pear is of Mexican origin. It was the Spanish who introduced it to Europe in the 16th century, with planting subsequently taking place in North Africa in regions with light, sandy, siliceous soil.
One of the “fat” plants, the prickly pear can grow to several meters in height and resembles a cactus with its flattened stems, cylindrical, glazed, deciduous leaves and spiny clusters of prickles known as glochidia.
Its spectacular yellow, bisexual flowers are arranged in aureoles on the margins of the plant’s terminal articles.
The fruit is a fleshy, ovoid, reddish berry containing numerous seeds, often called “pips”, from which a precious oil is extracted for its dermatological uses.
In Morocco, prickly pears are harvested by hand and peeled to separate the seeds.
Secondly, the oil is produced by hand, mechanically, simply by cold pressing the seeds, which is why it is called “virgin”, like our natural olive oil, for example.
